Steam has heated industry for two centuries and still carries the process heat of breweries, hospitals, laundries, food factories and chemical works, because it does something no other common medium matches: it delivers enormous amounts of heat, at a precisely controlled temperature, through a pipe that needs no pump. Understanding why, which comes down to one property called latent heat, is the foundation for every saving in this course, and it also produces the number every steam decision should be priced with: the cost of a tonne of steam.
